Richard Staunton (son in law of Fish market “co-flounder”, Fred Duckett) along with Bluewater Grill co-founder Jim “U” Ulcickas and partners Robert Hyman and Larry Macias, recently acquired the Fish Market to keep the iconic landmark restaurant “in the family”. “Bluewater Grill offers a more “current” take on the classic seafood dining experience with an innovative menu focused on regional specials, and special events that allow each restaurant to become a vibrant, extremely popular part of the community,” explained Staunton. While certain signature elements of the Fish Market have been retained, the restaurant’s new look features an updated interpretation of the traditional seafood restaurant motif. The 300 seat restaurant features a large, open central dining room with newly added booths marked by contemporary new color tones, upholstery, artwork and light fixtures. The smaller dining areas have been updated to retain their intimate feel including a remodeled patio, bar area, oyster bar, and full traditional sushi bar presided over by Sushi Master Tatsu Sano. Vintage black & white as well as color images of family and celebrity fishermen adorn the walls, along with vibrant images of exotic sea life by celebrated underwater photographer Beverly Factor. A retail seafood market features fresh premium quality seafood by the pound, chowders, signature salads, prepared foods and custom party platters of seafood and sushi.
Bluewater Grill Phoenix prints its lunch and dinner menu daily and features up to 40 varieties of fresh seafood, makes all of its chowders, bisque, dressings and sauces from scratch, purchases from renewable and sustainable sources and features locally grown products as part of its environmental efforts. Bluewater Grill purchases directly from fishermen and receives fresh seafood deliveries six days per week, hand shucks all oysters and clams to order and serves locally baked artisan sourdough bread. Phoenix customers guests will enjoy Bluewater Grill’s chedule of promotions, special events and tastings on the second Tuesday of every month where the latest seasonal fish is featured and paired with beer or wine. These events always sell out and are presided over by wine and seafood experts to share their knowledge with guests in a spirited setting.
